Christmas Gooey Butter Cookies (With Cake Mix)
Quick and easy gooey butter cookies recipe, homemade with simple ingredients. Starts off with yellow cake mix. Soft and chewy with a rich butter flavor.
- 1/2 cup Butter Unsalted, Room temperature
- 1 Egg Large
- 8 oz. Cream cheese Full fat, Softened
- 1 tsp Vanilla extract
- 1 box Yellow cake mix
- 1-2 cups Powdered sugar For rolling cookie dough balls
In a large mixing bowl, add butter, egg, cream cheese, vanilla extract and mix until smooth.
Add cake mix and mix until combined.
Cover bowl and chill in the fridge for at least 30 minutes to make the dough easier to handle.
Scoop out small portions of the dough and make little balls.
Roll these cookie balls in a bowl of powdered sugar until fully coated.
Place them on a cookie tray, lined with parchment paper.
Bake at 350 degrees F for 10-12 minutes or until edges are firm but the centers are slightly soft (should not be jiggly though!)
Optional: Sift more powdered sugar on top of the cookies, prior to serving.
