Applesauce Muffins

In a large mixing bowl, add butter, eggs, applesauce, granulated sugar, brown sugar, vanilla extract and mix until combined.
In another mixing bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda until combined. You can also mix in 1 tablespoon rolled oats, if you like.
Add this dry mixture into the wet mixture and mix until just combined. Don't over mix! It's okay if there are some lumps.
Pour batter in a cupcake pan, lined with cupcake liners.
Bake at 375 degrees F for 20-25 minutes or until an inserted toothpick in the center comes out clean and tops are golden brown.
Remove from oven and let muffins cool for about 10 minutes and then remove from pan. Enjoy!
