Sprinkle Cookies (Birthday Cookies)

- 2 Eggs Large
- ⅓ cup Oil
- 1 box Chocolate cake mix
- ½ cup Rainbow sprinkles For rolling cookie dough balls
In a mixing bowl, add eggs and oil and mix until smooth. Add chocolate cake mix and mix until combined.
Cover bowl and chill cookie dough in the fridge for 20 minutes to make it easier to handle.
Scoop out small portions of the dough and make little balls.
Roll them in a bowl of sprinkles until cookie balls are fully coated.
Place them on a cookie tray, lined with parchment paper. Bake at 350 degrees for 10-12 minutes or until the edges are firm but center is slightly soft.
