Sugar Free Red Velvet Crinkle Cookies

These sugar free red velvet crinkle cookies are made with Splenda and perfect for diabetics. Crispy and crinkly on the outside but soft on the inside.

Since I have been on a cookie making craze, I thought it was high time I developed a recipe for simple sugar free red velvet crinkle cookies because I haven’t found a single recipe that I actually liked.

I used Splenda Granulated No Calorie Sweetener to make them and loved the way they looked and tasted!

Before I even talk about these cookies, I just need to point out that I made THREE types of cookies, using a single batch of red velvet cookie dough.

The first type is perfect for DIABETICS and made entirely of Splenda.

The other TWO batches are covered in granulated sugar or powdered sugar to give them a crinkly appearance.

Anyways, I made TEENY TINY easy sugar free red velvet cookie balls.

They are so cute and BITE SIZED that you can just pop them in your mouth like candies…lol.

But, if you want more traditional looking cookies, you can FLATTEN the cookies before baking them.

Won’t these be perfect for Valentine’s Day or Mother’s Day or even Christmas?!

splenda campaignTo make these sugar free red velvet crinkle cookies, you will need the following ingredients:

1 1/2 cups flour
1 1/2 tsp baking powder
1/2 cup butter
2 eggs
3/4 cup Splenda Granulated No Calorie Sweetener
3 tbsp cocoa powder
1 tsp vanilla extract
1 tsp vinegar
1 tsp red color powder (or red gel coloring)
1/2 cup powdered sugar (Optional- For rolling the cookie balls)
1/2 cup granulated sugar (Optional- For rolling the cookie balls)

Notes:
– If you would like to make flat cookies, make sure to press the dough balls slightly before placing your tray in the oven.

And here are the steps:

Step 1:
Cream butter and Splenda in a mixing bowl.

Step 2:
Add the eggs and mix again.

Step 3:
Add vanilla extract and vinegar and mix again.

Step 4:
Add the food coloring and mix again.
The batter will curdle and look odd…Don’t worry at all!

Step 5:
Add flour, cocoa powder and baking powder and mix until just combined.

Step 6:
Your dough should look like this…

Step 7:
Scoop out the cookie dough (about 1 tsp) and roll it into small balls.
You can roll the balls in a bowl filled with powdered sugar or granulated sugar or nothing at all.
Place them on a cookie tray lined with parchment paper.
Bake at 350 degrees for about 6-7 minutes or until the cookies are slightly crispy on the sides.

And you are done!
