How To Make Lemon Curd

Learn how to make lemon curd. This easy recipe requires just 4 ingredients. It’s sweet with a subtle tartness and delicious on cakes and cupcakes.

It’s time for another tip of the month and today, I will show you how to make lemon curd.

This is such a CLASSIC and easy recipe and if you have never made homemade curd, you really need to try it!

All you need are FOUR simple ingredients that I bet you already have in your kitchen: Lemons, Sugar, Egg yolks and Butter.

how to make lemon curd 1I have seen some other recipes with cornstarch but I really DON’T think that’s necessary when you use the right amount of egg yolks.

The main purpose of egg yolks is to THICKEN the curd and make it smooth and creamy.

My Mom uses 5 egg yolks in her lemon curd recipe and I think that yields the BEST results.

how to make lemon curd 3I swear I can eat this curd by the spoonfuls but there are MANY other lemon curd uses too:

  1. Spread it on toast for breakfast or snack.
  2. Use it as a filling in your cakes and cupcakes.
  3. Use it as a filling in your baked pie shells and tart crusts to make lemon pie/tart.
  4. Spread it on scones with a little bit of butter…Mmmmm!
  5. Swirl it into your cheesecake batter and then bake it for an incredibly zesty dessert.
  6. Pour it on top of vanilla ice cream!
  7. Use it as a topping on pancakes, waffles and crepes.

how to make lemon curd 5To learn how to make lemon curd, you will need the following ingredients:

4 large lemons
5 egg yolks
1/2 cup butter
1 cup sugar
1/2 tsp lemon extract (optional)
Yellow food coloring (optional)

Notes:

– Use fresh lemons to make curd. Store bought lemon juice in bottles doesn’t work well at all. It’s not as fresh and there’s no zest in it.
– I like to add a little bit of lemon extract and yellow food coloring to enhance the appearance and flavor of this curd but it’s entirely optional.
– This curd will thicken a bit more, while it’s cooling down.

And here are the steps: 

Step 1:
Zest and juice all the lemons.

Step 2:
Add lemon juice, lemon zest, butter, sugar and egg yolks in a saucepan.

Step 3:
Cook at medium heat, while constantly whisking until the mixture thickens (takes about 10 minutes).

Step 4:
Add lemon extract and a couple of drops of food coloring and mix thoroughly.

Step 5:
Pour it in a jar and let it cool down.

Step 6:
Once the curd has fully cooled down, store in the refrigerator.

And you are done!

    How long will this lemon curd be good for in the refrigerator

      I would say 1 week. It might be good for a few days longer but it never lasts longer than a week in our house…lol.
