As most of you know, I participate in Roxana’s chocolate party each month.

And this month, we had to pair chocolate with cranberries! As soon as I found out “cranberries” was the secret ingredient, my heart just sank…lol.

Let’s just say … I don’t care much for cranberries.

But, I do have to admit that Roxana took me out of my comfort zone and after a few disappointing attempts, I finally came up with these insanely yummy choco peanut butter coconut cranberry balls!

These have now become one of my favorite snacks and I have  Roxana to thank for that Smile

Honest to God, I was expecting the worst when I took my first bite but to my surprise, the texture and all the flavors were working together in perfect harmony! YAYYYY!

The center was a cranberry explosion!

You can obviously replace it with anything else you like such as chopped nuts or other dried fruits or even chopped up chocolate bars… MMMMM!!!! I can’t wait to try those variations next time Smile with tongue out

To make these, you will need the following ingredients:

1  1/2 cup quick cooking oats
1/4 cup honey (or molasses, whichever you prefer)
1/4 cup peanut butter
2 tbsp shredded coconut
3 tbsp fat free milk
2 tbsp chopped up chocolate
1/2 cup chopped up dried cranberries

And here are the steps:

Step 1:
Add all the ingredients in a deep bowl.

Note: Honey and peanut butter have different consistencies based on brands. So, I would recommend that you mix oats, peanut butter, honey, coconut and chocolate first. Then, add a little milk at a time. Start with 1 tbsp and work your way up until you have a consistency which is suitable for making balls.

Step 2:
Mix everything thoroughly with a wooden spoon. The batter will get sticky and start clumping together.

Step 3:
Start taking portions of this batter and make balls with a hole in the center.
Also chop up some dried cranberries.

Step 4:
Fill the hole with those cranberries.

Step 5:
Cover the top with some more oatmeal batter.

Step 6:
Use your hands to make it smooth into a ball.

Step 7:
Line a cookie tray with parchment paper and place all these balls on the tray.
Bake at 350 degrees for 3-5 minutes. The heat makes these balls a little crunchy on the outside and they are not as sticky any more. I also think they hold their shape better.

And you are done!

I swear once you start eating these, you can’t stop…lol. They are so addictive!
